Irdamir is a family company dedicatet to the Export of Extra Virgin Olive Oil, and to give a good image of the product to other countries.
Is a family company dedicated to selling and producing Extra Virgin Olive Oil, mainly from the Empeltre and Arbequina olive varietie. It was created in 1998 with a clear notion in mind: to take advantage of the premium Olives from our region to produce high-quality Extra Virgin Olive Oils, combining state-of-the-art technology for Oil production with knowledge that has been passed down for generations in this olive-producing area.
As well as our own Olive tree crops, farmers from all over the region bring us their Olives for us to complete the long and industrious cultivation of Olives, extracting the highest quality oil, Extra Virgin Olive Oil.
Our Oil Mill or Oil Factory is located in the north of Spain, in the heart of the Ebro Valley, at the feet of the highest peak in the Iberian Mountain Range, the Moncayo, in the old Roman city called cascantum, now known as Cascante, in the Ribera de Navarra.
Cascante’’s history, like that of many towns in this region.is the history of its Olive trees and Oils. Olive cultivation was already mentioned in the fist Roman chronicles. More recently, at the beginning of the 20th century, oil from the Queiles Valley was acknowledged by being awarded many prizes to its quality. The region”s climate, which is ideal for cultivating Olive trees, and the nature of the earth have contributed greatly to the quality of the oil. A simple fact to comprehend how important the cultivation of olive trees is in this area: Cascante used used to have approximately 3.000 inhabitants and had up to 17 Oil factories.
Extra Virgin Olive Oil is natural fruit juice that preserves, unaltered, all the components and properties of olives as fruit . It is also the only vegetable Oil that is directy consumed raw, in its natural or Virgen state.
It is a 100% natural oil of which we could highlight the presence of fruity, very aromatic and highly complex attribute. Recommended in Mediterranean diets, for being a food that has many properties to fight different diseases; such as arthritis, asthma, cholesterol, diabetes, obesity, osteoporosis, etc. Reaffirmed by numerous scientific studies, that the best oil for health is olive oil.
It is available in 1 liter and 5 liter containers (Pet) as well as in 250 ml, 500 ml and 750 ml (Dop). Highlighting as a novelty product, the 500 ml Frasca whose use, containing decanter, is a refillable non-drip oil canister.
The brothers Mario and Martín are the ones who carry out the elaboration of the oil and supervise the entrance of olive to the factory.
Basically we look for the olive to be collected that same day and not be affected by any plague or disease, in less than 24 hours and after separating the olive from the leaf and cleaning it well, we proceed to the production of the oil.
The first step is the grind, the olive is crushed and whipped and then transferred to a centrifuge, where the solid is separated from the liquid, that is, on the one hand we will obtain a residue formed by the bone and the skin, and another one we will have the oil with a little water, that we will separate in another centrifugation much faster that takes advantage of the different density of the oil and the water to separate them.
Once the oil is made, we proceed to store it in stainless steel tanks, classifying it according to its characteristics and olive variety from which it comes. It is important to protect it from contact with air and light, as well as from changes in temperature, to avoid deterioration. The last step will be filtering and packaging it for its release to the market.
